· 200g rice noodles
· 2 tbsp tamarind paste
· 2 tbsp fish sauce
· 1 tbsp palm sugar
· 1 egg
· 1 cup cooked shrimp or chicken
· 1/2 cup bean sprouts
· 2 tbsp peanuts (crushed)
· Lime wedges
· Fresh coriander
Instructions: Cook the rice noodles according to package instructions. In a pan, heat oil and cook the egg until scrambled. Add shrimp/chicken, tamarind paste, fish sauce, sugar, and noodles. Stir-fry for a few minutes, then add bean sprouts and crushed peanuts. Serve with lime wedges and fresh coriander.
