300g shrimp (peeled and deveined)
3-4 kaffir lime leaves
1 stalk lemongrass (bruised)
1-2 Thai bird’s eye chilies (smashed)
1 cup mushrooms (sliced)
3 cups chicken broth
2 tbsp fish sauce
1 tbsp lime juice
Fresh cilantro (for garnish)
Instructions:
In a pot, bring chicken broth to a boil with lemongrass, lime leaves, and chilies.
Add shrimp and mushrooms, cooking until the shrimp turns pink.
Stir in fish sauce and lime juice.
Garnish with cilantro and serve hot.
